Corn Meal Muffins

A home-kitchen version of corn meal muffins, written step by step so it's easy to follow that's worth the oven time.

Ingredients
- 1 c. corn meal
- 2 Tbsp. brown sugar
- 3/4 tsp. baking soda
- 2 eggs, well beaten
- 1 1/2 c. sour milk
- 1 c. flour
- 1 tsp. salt
- 1 tsp. baking powder
- 1/4 c. melted bacon fat
Method
Sift flour.
Measure and sift with baking soda, salt and baking powder.
Mix with corn meal.
Combine bacon fat, sugar and eggs.
Add sour milk.
Combine with dry ingredients.
Beat only until smooth.
Fill well-oiled muffin pan 2/3 full.
Bake in hot oven (435°) for 15 to 20 minutes.
