Cowboy Cookies

A home-kitchen version of cowboy cookies, written step by step so it's easy to follow that's worth the oven time.

Ingredients
- 1 c. Crisco (butter flavor is good)
- 1 c. sugar
- 1 c. light brown sugar, firmly packed
- 2 eggs
- 1 tsp. vanilla
- 1/2 tsp. salt
- 2 c. quick-cooking oatmeal or Rice Krispies
- 1 pkg. (12 oz.) semi-sweet chocolate bits
- 2 c. all-purpose flour
- 1 c. chopped pecans
- 1 tsp. baking soda
- 1/2 tsp. baking powder
Method
Cream sugars and Crisco.
Add eggs, one at a time, beating well after each.
Add vanilla.
Sift together flour, salt, baking soda and baking powder.
Blend into butter mixture.
Add oatmeal or Rice Krispies and stir well.
Add chocolate bits and nuts. Stir to distribute evenly.
Drop by teaspoon onto greased cookie sheet.
Bake at 350° for 10 to 12 minutes or until golden brown.
