Ingredients

  • 4 lb. confectioners sugar
  • 1 c. cocoa
  • 3 c. chopped pecans
  • 1 lb. pasteurized processed cheese cut into pieces
  • 2 c. butter or margarine cut into pieces
  • 1 Tbsp. vanilla extract

Method

  1. Sift confectioners sugar and cocoa into a very large bowl; stir in pecans.

  2. Stirring frequently, melt cheese in the top of a large double boiler over simmering water.

  3. Add butter to melted cheese, stirring until butter melts; stir in vanilla.

  4. Add melted cheese mixture to sugar mixture.

  5. Stir until well blended.

  6. Press into a 10 1/2x15 1/2 jellyroll pan.

  7. Cover and chill until firm.

  8. Cut into 1 inch squares.

  9. Store in an airtight container in a cool place. Yield:

  10. about 12 1/2 dozen pieces.
