A south african take on hearty beef and vegetable potjie, written step by step so it's easy to follow built around good beef and pantry staples.

Ingredients
- 1 kg beef shin, cubed
- 2 tbsp oil
- 2 onions, sliced
- 3 carrots, chunked
- 4 potatoes, quartered
- 2 cups beef stock
- 1 cup red wine
- 2 bay leaves
- 1 tbsp tomato paste
- Salt and pepper
Method
Heat the oil in a heavy pot or potjie and brown the beef in batches.
Add the onions and cook until soft.
Stir in the tomato paste, then pour in the wine and stock and add the bay leaves.
Cover and simmer gently for 2 hours until the beef is tender.
Layer the carrots and potatoes on top, cover, and cook for 45 minutes without stirring.
Season well and serve straight from the pot.
