Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1/2 tsp chilli flakes
  • 2 cans chopped tomatoes
  • 1 can cannellini beans, drained
  • 3 cups vegetable stock
  • Salt and pepper
  • Crusty bread to serve

Method

  1. Soften the onion in the oil over medium heat for 5 minutes.

  2. Add the garlic, paprika and chilli and cook for 1 minute.

  3. Tip in the tomatoes, beans and stock and bring to a simmer.

  4. Cook for 20 minutes, then blend half the soup for a thicker texture.

  5. Season to taste and serve with crusty bread.
