Spicy Tomato And Bean Soup

A mediterranean take on spicy tomato and bean soup, written step by step so it's easy to follow built around good beef and pantry staples.

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp smoked paprika
- 1/2 tsp chilli flakes
- 2 cans chopped tomatoes
- 1 can cannellini beans, drained
- 3 cups vegetable stock
- Salt and pepper
- Crusty bread to serve
Method
Soften the onion in the oil over medium heat for 5 minutes.
Add the garlic, paprika and chilli and cook for 1 minute.
Tip in the tomatoes, beans and stock and bring to a simmer.
Cook for 20 minutes, then blend half the soup for a thicker texture.
Season to taste and serve with crusty bread.
