Ingredients

  • 2/3 c. margarine
  • 1 1/2 c. sugar
  • 2 tsp. baking powder
  • 4 Tbsp. milk
  • 1/2 c. chopped pecans
  • 2 eggs
  • 1 1/2 c. flour
  • 1/4 tsp. salt
  • 1 c. mashed bananas
  • 1 tsp. vanilla

Method

  1. Cream margarine and sugar; add eggs.

  2. Sift flour, baking powder and salt together.

  3. Add flour mixture and milk to creamed ingredients, then add mashed bananas, nuts and vanilla.

  4. Pour into a greased loaf pan or bake as cupcakes.

  5. (Makes 2 dozen cupcakes.)

  6. Bake at 350°.

  7. Cook the loaf for 45 minutes, cook the muffins for 25 minutes.
