Ingredients

  • 1 gal. milk
  • 8 c. stale bread cubes *
  • 10 eggs
  • 1 c. sugar
  • 2 tsp. salt
  • 1 tsp. nutmeg
  • 2 Tbsp. vanilla
  • 1/2 c. melted butter
  • 1 c. raisins

Method

  1. Heat the milk in double boiler (I use 2 mixing bowls set in large kettles) until bubbly around the edges.

  2. The butter can be melted in the milk.

  3. Beat eggs lightly, add sugar and flavorings. Put bread cubes in baking pan (10 x 18 x 2 1/2-inches).

  4. Mix hot milk, eggs and flavorings.

  5. Pour over bread.

  6. Sprinkle raisins on top and try to submerge them somewhat with a rubber spatula.

  7. This will prevent them from sinking to the bottom or clumping together. Put your large broiler pan filled with water on lower oven rack and set pudding pan on a rack above.

  8. Bake about 1 hour or until a dinner knife inserted in the middle comes out clean.

  9. Serves 36.
