Ingredients

  • 2 c. chicken broth
  • 1 c. brown rice (uncooked)
  • 1/2 c. grated raw carrot
  • 1/2 c. finely chopped celery
  • 1/4 c. finely chopped green onions
  • 1 clove garlic, minced
  • 1/2 tsp. salt
  • 1/4 tsp. red pepper
  • 3 Tbsp. slivered almonds, toasted

Method

  1. Bring broth to a boil in a heavy saucepan.

  2. Stir in rice and rest of ingredients, except almonds.

  3. Cover; reduce heat and simmer 25 to 30 minutes or until liquid is absorbed.

  4. Stir in almonds.

  5. Yields 8 servings.
