Brown Rice Pilaf

A home-kitchen version of brown rice pilaf, written step by step so it's easy to follow built around good chicken and pantry staples.

Ingredients
- 2 c. chicken broth
- 1 c. brown rice (uncooked)
- 1/2 c. grated raw carrot
- 1/2 c. finely chopped celery
- 1/4 c. finely chopped green onions
- 1 clove garlic, minced
- 1/2 tsp. salt
- 1/4 tsp. red pepper
- 3 Tbsp. slivered almonds, toasted
Method
Bring broth to a boil in a heavy saucepan.
Stir in rice and rest of ingredients, except almonds.
Cover; reduce heat and simmer 25 to 30 minutes or until liquid is absorbed.
Stir in almonds.
Yields 8 servings.
