Ingredients

  • 1 whole chicken (about 1.6 kg)
  • 4 tbsp soft butter
  • 4 garlic cloves, crushed
  • 1 lemon, halved
  • 1 tsp dried thyme
  • Salt and pepper
  • Olive oil

Method

  1. Preheat the oven to 200C.

  2. Mix the butter with the garlic, thyme, salt and pepper.

  3. Loosen the skin over the breast and push half the butter underneath; rub the rest over the outside.

  4. Put the lemon halves inside the cavity and set the chicken in a roasting tin.

  5. Roast for 1 hour 20 minutes, basting once, until the juices run clear.

  6. Rest for 15 minutes before carving.
