Garlic Butter Roast Chicken

A mediterranean take on garlic butter roast chicken, written step by step so it's easy to follow built around good chicken and pantry staples.

Ingredients
- 1 whole chicken (about 1.6 kg)
- 4 tbsp soft butter
- 4 garlic cloves, crushed
- 1 lemon, halved
- 1 tsp dried thyme
- Salt and pepper
- Olive oil
Method
Preheat the oven to 200C.
Mix the butter with the garlic, thyme, salt and pepper.
Loosen the skin over the breast and push half the butter underneath; rub the rest over the outside.
Put the lemon halves inside the cavity and set the chicken in a roasting tin.
Roast for 1 hour 20 minutes, basting once, until the juices run clear.
Rest for 15 minutes before carving.
