Ingredients

  • 3 c. cooked chicken, diced large
  • 3 c. celery, thinly sliced
  • 1 1/2 c. bread cubes, toasted
  • 1 1/2 c. mayonnaise
  • 1 tsp. sugar
  • 3/4 c. almonds, sliced and toasted
  • 3 Tbsp. lemon juice
  • 3 tsp. grated onion
  • 3/4 tsp. salt
  • 1/8 tsp. curry powder (optional)
  • 1 c. crushed potato chips
  • 1/2 c. mild Cheddar cheese, grated

Method

  1. In large bowl, mix together mayonnaise, sugar, lemon juice, grated onion, salt and curry powder.

  2. Add chicken, celery and bread cubes; toss lightly to mix.

  3. Place in 13 x 9-inch baking dish.

  4. Sprinkle with crushed potato chips, then cheese.

  5. Bake at 450° for 15 minutes or until hot.

  6. Serves 8.

  7. Wonderful for ladies' luncheons or when company arrives unexpectedly.
