Hot Chicken Salad

A indian take on hot chicken salad, written step by step so it's easy to follow built around good chicken and pantry staples.

Ingredients
- 3 c. cooked chicken, diced large
- 3 c. celery, thinly sliced
- 1 1/2 c. bread cubes, toasted
- 1 1/2 c. mayonnaise
- 1 tsp. sugar
- 3/4 c. almonds, sliced and toasted
- 3 Tbsp. lemon juice
- 3 tsp. grated onion
- 3/4 tsp. salt
- 1/8 tsp. curry powder (optional)
- 1 c. crushed potato chips
- 1/2 c. mild Cheddar cheese, grated
Method
In large bowl, mix together mayonnaise, sugar, lemon juice, grated onion, salt and curry powder.
Add chicken, celery and bread cubes; toss lightly to mix.
Place in 13 x 9-inch baking dish.
Sprinkle with crushed potato chips, then cheese.
Bake at 450° for 15 minutes or until hot.
Serves 8.
Wonderful for ladies' luncheons or when company arrives unexpectedly.
