Ingredients

  • 1 lb. beef round tip steaks, cut 1/8 to 1/4-inch thick
  • 2 cloves garlic, crushed
  • 1 Tbsp. olive oil
  • 2 small zucchini, thinly sliced
  • 1 c. cherry tomato halves
  • 1/4 c. bottled Italian salad dressing
  • 2 c. cooked spaghetti
  • 1 Tbsp. grated Parmesan cheese

Method

  1. Cut beef steaks crosswise into 1-inch wide strips.

  2. Cut each strip crosswise in half.

  3. Cook and stir garlic in oil in large nonstick skillet over medium-high heat for 1 minute.

  4. Add beef strips (1/2 at a time). Stir-fry 1 to 1 1/2 minutes.

  5. Season with salt and pepper.

  6. Remove with slotted spoon.

  7. Keep warm.

  8. Add zucchini and stir-fry 2 to 3 minutes or until crisp-tender. Return beef to skillet with tomato halves and dressing.

  9. Heat through.

  10. Serve over hot pasta.

  11. Sprinkle with cheese.

  12. Yields 4 servings.
