A mexican take on king ranch, written step by step so it's easy to follow built around good chicken and pantry staples.

Ingredients
- 1/4 c. diced onion
- 1/4 c. diced green pepper
- 1/4 c. butter
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 lb. grated cheese
- 2 1/2 c. boiled chicken
- 1 can Ro-Tel tomatoes with green chilies
- 1/8 tsp. garlic powder or 1/4 tsp. garlic clove, diced
- 1 (8 oz.) pkg. soft tortillas
Method
Saute onion and green pepper in butter.
Add soups, tomatoes and garlic.
Line large casserole dish with tortillas (about 12). Fill casserole with alternate layers of chicken, sauce and cheese. Bake at 350° for 30 minutes.
Serves 8.
