Ingredients

  • 1 1/4 c. boiling water
  • 1 c. Quaker or Mother's oats (uncooked)
  • 1/2 c. butter or margarine, softened
  • 1 c. granulated sugar
  • 1 c. firmly packed brown sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1 1/2 c. sifted all-purpose flour
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 3/4 tsp. cinnamon
  • 1/4 tsp. nutmeg

Method

  1. Pour boiling water over oats; cover and let stand 20 minutes. Beat butter until creamy; gradually add sugars and beat until fluffy.

  2. Blend in vanilla and eggs.

  3. Add oats mixture; mix well. Sift together flour, soda, salt, nutmeg and cinnamon; add to creamed mixture.

  4. Mix well.

  5. Pour batter into well-greased and floured 9-inch square pan.

  6. Bake in preheated 350° oven for 50 to 55 minutes.

  7. Do not remove from pan.
