Oven Fry Orange Roughy

A home-kitchen version of oven fry orange roughy, written step by step so it's easy to follow that's worth the oven time.

Ingredients
- 1 lb. orange roughy
- 1/2 c. flour
- 1 c. bread crumbs
- 2 egg whites
- salt and pepper
Method
Put bread crumbs in pan and toast at 375° for 8 minutes.
Stir occasionally.
Put flour on a piece of wax paper, mixed with salt and pepper.
Beat egg white and place in shallow bowl.
Pat dry orange roughy and coat with flour, then egg white and then toasted bread crumbs.
Place fish on baking pan lined with foil and coat it with some vegetable oil.
Bake at 375° for 8 minutes.
Turn over and bake another 6 minutes.
