Persimmon Cookies

A home-kitchen version of persimmon cookies, written step by step so it's easy to follow that's worth the oven time.

Ingredients
- 1 c. persimmon pulp
- 1/2 c. shortening
- 1 c. sugar
- 1 egg, beaten
- 2 c. flour
- 1 c. chopped nuts
- 1 tsp. cinnamon
- 1/2 tsp. cloves
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 c. raisins or chocolate chips or butterscotch chips
Method
Beat persimmon pulp, baking soda and shortening until creamy. Add well beaten egg.
Sift flour and spices, add dry walnuts and raisins.
Drop by teaspoons on greased baking sheets.
Bake at 375° for 12 to 15 minutes.
