Baked Zita With Mozzarella

A italian take on baked zita with mozzarella, written step by step so it's easy to follow built around good beef and pantry staples.

Ingredients
- 1 c. to 1 lb. low sodium tomatoes
- 1 Tbsp. olive oil
- 1 medium onion, diced
- 1 c. tomato sauce
- 3 cloves minced garlic
- 1/2 tsp. oregano
- 1 tsp. basil
- 1/2 tsp. fennel seed, crushed
- 1/2 tsp. red pepper
- 8 oz. zita
- 1 c. (4 oz.) Mozzarella cheese
- 2 Tbsp. Parmesan cheese
Method
Puree tomatoes.
Cook onion in olive oil 5 minutes.
Add spices; cook 10 minutes.
Cook zita; drain and rinse in cold water.
Drain well.
Place in 1 1/2 quart ungreased casserole. Cover with sauce and cheese.
Bake in 375° oven 30 to 35 minutes. Let stand 5 minutes before serving.
