Brunswick Stew

A home-kitchen version of brunswick stew, written step by step so it's easy to follow built around good chicken and pantry staples.

Ingredients
- 1 (2 lb.) chicken
- 3 c. water
- 1 1/2 tsp. salt
- 3 potatoes
- 1 onion
- 1 (10 oz.) box frozen limas
- 1 c. frozen or 1 can corn
- 1 can tomatoes
- salt and pepper to taste
- 1/4 c. butter
Method
Bring chicken to boil in salted water.
Reduce heat and simmer 1 hour, until tender.
Remove from both.
Add vegetables to broth and simmer until tender.
Strip chicken from bones in large pieces and add to stew last 5 minutes of cooking.
