Ingredients

  • 2 c. boiling water
  • 1 c. diced potatoes
  • 1/2 c. sliced celery
  • 1 to 1 1/2 tsp. salt
  • 1/4 c. butter
  • 2 c. milk
  • 2 c. (8 oz.) shredded Cheddar cheese
  • 2 c. cauliflowerets
  • 1/2 c. sliced carrots
  • 1/4 c. chopped onion
  • 1/4 tsp. pepper
  • 1/4 c. flour
  • 1 c. cubed ham

Method

  1. In saucepan, combine water, vegetables, salt and pepper. Cover and simmer 10 minutes.

  2. Do not drain.

  3. In large saucepan, melt butter.

  4. Stir in flour, them milk and heat to boiling. Continue simmering, stirring constantly until thickened.

  5. Add Cheddar cheese.

  6. Stir until melted.

  7. Add undrained vegetables and ham.

  8. Heat through, but do not boil.

  9. Freezes well.

  10. Makes 8 servings.
