Chicken Casserole

A home-kitchen version of chicken casserole, written step by step so it's easy to follow built around good chicken and pantry staples.

Ingredients
- 1 large pkg. spinach noodles, cooked in broth
- 1 c. chopped celery
- 1 large green pepper, chopped
- 1 large onion, chopped
- 6 chicken breasts, boiled (save 1 c. broth for mixture)
- 1/2 lb. Velveeta cheese
- mushrooms (optional)
- 1 can mushroom soup
Method
Cook chicken. Saute celery, pepper and onion. Add cheese and soup. Add 1 cup chicken broth. Mix spinach with chicken mixture. Bake, uncovered, for 30 minutes at 350°.
