Classic Malva Pudding

A south african take on classic malva pudding, written step by step so it's easy to follow that's worth the oven time.

Ingredients
- 1 cup flour
- 1 cup sugar
- 1 egg
- 1 tbsp apricot jam
- 1 tbsp butter
- 1 tsp vinegar
- 1 tsp bicarbonate of soda
- 1/2 cup milk
- For the sauce: 1 cup cream
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup hot water
Method
Preheat the oven to 180C and grease an ovenproof dish.
Beat the egg and sugar until pale, then mix in the jam, butter and vinegar.
Dissolve the bicarb in the milk and add to the batter with the flour. Mix to a smooth batter.
Pour into the dish and bake for 35 minutes until risen and dark golden.
Warm all the sauce ingredients in a pot until smooth, then pour over the hot pudding.
Let it soak for 10 minutes before serving warm with custard.
