Ingredients

  • 3 to 4 lb. corned beef
  • 1/4 c. water
  • 2 Tbsp. pickling spice
  • 1 orange, sliced
  • 1 onion, sliced
  • 1 celery stalk with leaves
  • 1 carrot, sliced

Method

  1. Soak corned beef in water to cover for 1/2 hour or longer if deeply corned.

  2. Place a large sheet of heavy-duty foil on a shallow pan.

  3. Remove corned beef from water and pat dry to remove any salt on surface.

  4. Place in center of foil and pour over it 1/4 cup fresh water.

  5. Sprinkle with the spice and arrange orange slices and vegetables over and around the meat.

  6. Bring long ends of foil up over meat and seal with a tight double fold.

  7. Seal other ends, turning them up so liquid can not run out.

  8. Bake in a 300° oven for 4 hours.

  9. Remember, always slice meat across the grain.
