Dijon Loaf

A home-kitchen version of dijon loaf, written step by step so it's easy to follow built around good pork and pantry staples.

Ingredients
- 4 c. flour
- 2 Tbsp. sugar
- 1/2 tsp. salt
- 2 pkg. RapidRise yeast
- 1 c. water
- 1/4 c. Dijon mustard
- 2 Tbsp. butter
- 1 1/2 c. ham, chopped
- 1 c. Swiss cheese
- 1 c. Cheddar cheese
- 1/2 c. dill pickles
- 1 egg, beaten
Method
Set aside 1 cup flour. Mix remaining flour, sugar, salt and yeast. Heat mustard and butter to 130°. Stir in flour mixture. Stir in enough of the reserved flour to make a soft dough. Knead 4 minutes. Roll out dough to 1/4-inch. Sprinkle with ham, cheese and pickles. Fold in half and press edges. Place on a greased baking sheet and let rise 15 minutes. Brush with egg and bake at 375° until golden.
