Down Jersey Blueberry Pie

A home-kitchen version of down jersey blueberry pie, written step by step so it's easy to follow that's worth the oven time.

Ingredients
- 4 c. blueberries
- 1 1/4 c. water
- 1 c. sugar
- 3 Tbsp. cornstarch
- 1/4 c. water
- 1 Tbsp. lemon juice
- 1 baked 9-inch pie shell
Method
Combine 1 cup blueberries with 1 1/4 cups water and the cup of sugar in a saucepan and bring to a boil. Mix the cornstarch with the 1/4 cup of water and stir into blueberry sauce. Cook slowly until thick and clear. Add lemon juice and allow to cool. Then add the remaining 3 cups of berries. Chill in refrigerator.
