A indian take on egg casserole, written step by step so it's easy to follow that's worth the oven time.

Ingredients

  • 1 Vidalia onion, chopped
  • 1 (16 oz.) pkg. fresh mushrooms
  • 2 green peppers
  • 1 clove garlic
  • olive oil
  • 6 pieces bread (buttered with either butter or margarine)
  • 6 eggs
  • milk (as much as you would like; to fluff eggs)

Method

  1. Saute together first 5 ingredients.

  2. In a separate 9 x 12-inch pan, mix bread, eggs

  3. and

  4. milk.

  5. Put

  6. pieces of bread into

  7. pan; add your

  8. vegetables,

  9. then

  10. your

  11. eggs.

  12. Place in refrigerator overnight (at least 8 hours). Add Cheddar cheese before cooking.

  13. Bake at 350° for 1 hour.
