Fiesta Shrimp Dip

A home-kitchen version of fiesta shrimp dip, written step by step so it's easy to follow built around good seafood and pantry staples.

Ingredients
- 2 (4 1/2 oz.) cans shrimp, rinsed and drained or 1 (10 oz.) pkg. frozen, cooked shrimp, thawed
- 1 (3 oz.) pkg. cream cheese, softened
- 1/2 c. Thousand Island dressing
- 1/4 c. mayonnaise
- 1/3 c. picante sauce
- 2 Tbsp. grated onion
- 1 tsp. horseradish
- 2 Tbsp. thinly sliced green onion tops
Method
Finely chop shrimp, reserving a few whole shrimp for garnish. Combine chopped shrimp with remaining ingredients, except green onion.
Mix well.
Spoon into serving bowl; garnish with green onion and reserved shrimp.
Chill.
Serve with assorted crackers, chips or vegetable dippers.
Makes about 2 1/2 cups dip.
