Ingredients

  • 2 cups flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 2 cups buttermilk
  • 2 eggs
  • 3 tbsp melted butter

Method

  1. Whisk the flour, sugar, baking powder, bicarb and salt in a bowl.

  2. In another bowl beat the buttermilk, eggs and melted butter.

  3. Fold the wet into the dry until just combined; a few lumps are fine.

  4. Heat a greased pan over medium heat and pour in 1/4 cup batter per pancake.

  5. Cook until bubbles form on top, then flip and cook 1 more minute.

  6. Serve warm with syrup and fruit.
