Ingredients
- 2 cups flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/2 tsp salt
- 2 cups buttermilk
- 2 eggs
- 3 tbsp melted butter
Method
Whisk the flour, sugar, baking powder, bicarb and salt in a bowl.
In another bowl beat the buttermilk, eggs and melted butter.
Fold the wet into the dry until just combined; a few lumps are fine.
Heat a greased pan over medium heat and pour in 1/4 cup batter per pancake.
Cook until bubbles form on top, then flip and cook 1 more minute.
Serve warm with syrup and fruit.
