Ingredients

  • 2 c. ham, cut in cubes
  • 1 Tbsp. butter or margarine
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1 clove garlic, minced
  • 1 (1 lb.) can stewed tomatoes
  • 1 1/2 c. water
  • 1/2 tsp. salt
  • 1/2 tsp. thyme, crushed
  • 1/4 tsp. hot pepper sauce
  • 1 c. uncooked rice

Method

  1. Saute ham lightly in margarine or butter about 5 minutes.

  2. Add the onion, green pepper and garlic.

  3. Cook 5 minutes; stir occasionally.

  4. Stir in tomatoes, water, salt, thyme and hot sauce. Bring to a boil and stir in the rice.

  5. Cover, lower heat and simmer about 30 minutes or until rice is done.

  6. Makes 6 servings.
