Jambalaya

A home-kitchen version of jambalaya, written step by step so it's easy to follow built around good beef and pantry staples.

Ingredients
- 2 c. ham, cut in cubes
- 1 Tbsp. butter or margarine
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1 clove garlic, minced
- 1 (1 lb.) can stewed tomatoes
- 1 1/2 c. water
- 1/2 tsp. salt
- 1/2 tsp. thyme, crushed
- 1/4 tsp. hot pepper sauce
- 1 c. uncooked rice
Method
Saute ham lightly in margarine or butter about 5 minutes.
Add the onion, green pepper and garlic.
Cook 5 minutes; stir occasionally.
Stir in tomatoes, water, salt, thyme and hot sauce. Bring to a boil and stir in the rice.
Cover, lower heat and simmer about 30 minutes or until rice is done.
Makes 6 servings.
