Russian Sauerkraut Soup

A home-kitchen version of russian sauerkraut soup, written step by step so it's easy to follow built around good chicken and pantry staples.

Ingredients
- 1 c. chopped onion
- 2 cloves garlic, minced
- 4 Tbsp. butter, divided
- 1/4 lb. diced pork (1 chop should do it)
- 2 (14 oz.) cans chicken broth
- 2 (14 oz.) cans beef broth
- 1 small can sauerkraut, drained
- 2 Tbsp. flour
- 2 Tbsp. long grain rice (optional)
Method
Cook onion and garlic in 2 tablespoons butter until onion is tender.
Add pork and 1 cup of either broth.
Cook over low heat for 20 minutes.
Add balance of both broths and the sauerkraut. Cover and simmer for 45 minutes.
Blend flour and the 2 tablespoons butter.
Add to soup.
Cook and stir until thickened.
If you wish, add rice before the last 20 minutes of cooking.
Makes 8 to 10 servings.
