Sausage Pie

A home-kitchen version of sausage pie, written step by step so it's easy to follow that's worth the oven time.

Ingredients
- 16 small fresh link pork sausages (approximately 1 lb.)
- 1/2 medium green pepper, chopped
- 1/2 medium sweet red pepper, chopped
- 1 Tbsp. cooking oil
- 3 c. cooked long grain rice
- 2 Tbsp. chopped fresh parsley
- 1 tsp. dried basil
- 4 to 5 medium tomatoes, peeled and chopped
- 1 (10 oz.) pkg. frozen corn, thawed
- 1 c. (4 oz.) shredded Cheddar cheese
- 1 Tbsp. Worcestershire sauce
- 1 tsp. salt
- 1 c. soft bread crumbs
- 2 Tbsp. butter or margarine, melted
Method
Place sausages on a rack in a baking pan.
Bake at 350° for 15 minutes or until lightly browned. Cut into 1-inch pieces.
Set aside.
In a skillet, saute peppers in oil for 3 minutes. Place in 3-quart casserole.
Add the sausages and the next 8 ingredients. Combine bread crumbs and butter. Sprinkle on top of casserole. Bake, uncovered, at 350° for 30 to 40 minutes or until heated through.
Yields 6 to 8 servings.
