Ingredients

  • 2 Tbsp. butter
  • 2 slices bacon, finely diced
  • 1 medium onion, thinly sliced
  • 1/4 lb. sweet potatoes, peeled
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. chili powder
  • 1/4 tsp. cumin
  • 1/4 tsp. cayenne
  • 3 c. chicken stock
  • 2 Tbsp. tomato paste
  • 1/2 c. nonhomogenized peanut butter
  • salt and pepper
  • 1/2 c. sour cream

Method

  1. Melt the butter over medium heat in a 3 1/2 or 4-quart saucepan, then add the bacon.

  2. After a couple of minutes, add the onion, then cover the pot and cook for about 10 minutes or until the onion is translucent.

  3. Check the onion every now and then to make sure it is not burning.
