Ingredients

  • 2 c. diced cooked chicken
  • 2 Tbsp. shortening
  • 1/2 c. onion (large chunks)
  • 2 c. carrot chunks
  • 1 1/4 c. water
  • 3 chicken bouillon cubes
  • 1/4 c. packed brown sugar
  • 2 Tbsp. cornstarch
  • 1/4 tsp. ginger
  • 1/4 c. catsup
  • 2 Tbsp. vinegar
  • 1 Tbsp. soy sauce
  • 1 c. green pepper (large chunks)
  • 8 oz. pineapple chunks

Method

  1. Saute onion in 2 tablespoons shortening.

  2. Add carrots, water and bouillon cubes.

  3. Simmer 5 minutes.

  4. Combine next 6 ingredients.

  5. Add to vegetable mixture and cook until clear.

  6. Add pepper, pineapple and chicken.

  7. Cover and simmer 5 minutes or until heated through.

  8. Serve with rice or angel hair noodles. Serves 6 people.
