Tamale Pie

Ingredients

  • 1 small onion, minced
  • 1 clove garlic, minced
  • 1 Tbsp. fat
  • 1 lb. ground beef
  • 1/4 lb. bulk sausage
  • 1 can (1 lb.) tomatoes
  • 1 can (1 lb.) whole kernel corn, drained
  • 1 1/2 tsp. salt
  • 2 Tbsp. chili powder
  • 18 pitted ripe olives
  • 1 c. corn meal
  • 1 c. milk
  • 2 eggs, well beaten
  • 1 c. grated Cheddar cheese

Method

  1. Heat oven to 350°.

  2. Saute onions and garlic in hot fat until yellow.

  3. Add meat and brown.

  4. Pour off excess fat.

  5. Add vegetables and seasonings, bring to a boil.

  6. Pour mixture into a deep casserole.

  7. Press olives into meat.

  8. Combine corn meal, milk and eggs.

  9. Spoon over filling.

  10. Sprinkle with cheese.

  11. Bake 1 hour. Serves 6 to 8.
