Tuna-Noodle Casserole

A italian take on tuna-noodle casserole, written step by step so it's easy to follow built around good fish and pantry staples.

Ingredients
- 3 c. medium noodles (4 oz.)
- 1 c. chopped celery
- 1/4 c. chopped onion
- 2 Tbsp. margarine or butter
- 1 (10 3/4 oz.) can condensed Cheddar cheese soup
- 3/4 c. milk
- 1 (9 1/2 oz.) can tuna, drained and broken into chunks
- 1/4 c. chopped pimento
- 2 Tbsp. grated Parmesan cheese
- 1 c. cooked vegetables (optional)
Method
Cook noodles according to package directions; drain.
In a saucepan, cook celery and onion in margarine or butter until tender.
Stir in soup and milk.
Gently stir in tuna (and vegetables, if desired) and the cooked noodles.
Transfer to a 1 1/2-quart casserole. Sprinkle with Parmesan cheese. Bake at 375° for 25 to 30 minutes or until heated through.
