Ingredients

  • 5 1/2 to 6 1/2 c. flour
  • 2 1/2 tsp. salt
  • 1 c. yellow cornmeal
  • 2 pkg. yeast
  • 1/4 c. margarine
  • 2 c. very hot water
  • 1/2 c. molasses

Method

  1. Mix 2 1/2 cups flour, salt, cornmeal and undissolved yeast; add margarine.

  2. Gradually add water and molasses beating 2 minutes at medium speed on electric mixer.

  3. Add 1/2 cup flour or enough to make a thick batter.

  4. Beat a high speed for 2 minutes.

  5. Stir in enough flour to make a soft dough.

  6. Turn out and knead until smooth and elastic (8 to 10 minutes).

  7. Place in greased bowl; cover and let rise until doubled (1 hour).

  8. Punch down; place in greased pans.

  9. Cover and let rise 45 minutes.

  10. Bake at 375° for 35 minutes.
