Anadama Bread

A home-kitchen version of anadama bread, written step by step so it's easy to follow that comes together with everyday ingredients.

Ingredients
- 5 1/2 to 6 1/2 c. flour
- 2 1/2 tsp. salt
- 1 c. yellow cornmeal
- 2 pkg. yeast
- 1/4 c. margarine
- 2 c. very hot water
- 1/2 c. molasses
Method
Mix 2 1/2 cups flour, salt, cornmeal and undissolved yeast; add margarine.
Gradually add water and molasses beating 2 minutes at medium speed on electric mixer.
Add 1/2 cup flour or enough to make a thick batter.
Beat a high speed for 2 minutes.
Stir in enough flour to make a soft dough.
Turn out and knead until smooth and elastic (8 to 10 minutes).
Place in greased bowl; cover and let rise until doubled (1 hour).
Punch down; place in greased pans.
Cover and let rise 45 minutes.
Bake at 375° for 35 minutes.
