Buttermilk Biscuits

Ingredients

  • 2 c. all purpose flour
  • 3 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 3 Tbsp. cold butter or stick margarine
  • 3/4 to 1 cup 1% buttermilk
  • 1 Tbsp. fat-free milk

Method

  1. Preheat oven to 450°.

  2. In a bowl, combine the flour, baking powder, baking soda and salt; cut in butter until mixture resembles coarse crumbs.

  3. Stir in enough buttermilk just to moisten dough. Turn onto a lightly floured surface; knead 3 to 4 times.

  4. Pat or roll to 3/4 inch thickness.

  5. Cut with a floured 2 1/2 inch biscuit cutter.

  6. Place on a baking sheet coated with nonstick cooking spray.

  7. Brush with milk.

  8. Bake for 12 to 15 minutes or until golden brown.

  9. Yield:

  10. 8 biscuits.
