Chipped Steak Rolls

A mediterranean take on chipped steak rolls, written step by step so it's easy to follow built around good beef and pantry staples.

Ingredients
- 1/2 c. diced green peppers
- 1 medium onion (1/2 c.)
- 1 pimento, chopped
- 2 Tbsp. vegetable oil
- 1 c. tomato paste (6 oz.)
- 1/2 c. chopped black olives
- 1/4 c. shredded Cheddar cheese
- 1/4 c. fine dry bread crumbs
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 6 cube or minute steaks
- 3/4 c. water
Method
Saute green peppers, onion and pimento in oil until onion is soft.
Stir in tomato paste, olives, cheese, bread crumbs, salt, chili powder and pepper.
Remove from heat.
Spread thin layer of mixture over each steak; roll up and fasten with wooden picks. Place, seam side down, in a shallow baking pan.
Stir water into remaining tomato mixture.
Heat to boiling, then pour over steaks. Bake in a 375° oven for 45 minutes, or until meat is tender.
