Ingredients

  • 1 (20 oz.) can crushed, unsweetened pineapple or fruit cocktail
  • 1 small pkg. sugar-free gelatin
  • 2 (3 oz.) pkg. light cream cheese
  • 1/3 c. pecans
  • 2 pkg. low calorie whipped topping mix
  • 1 Tbsp. lemon juice (when using pineapple or lemon gelatin)

Method

  1. Drain fruit, reserving juice.

  2. In saucepan, cook 1 cup reserved juice over medium heat; stir in gelatin.

  3. Beat cream cheese in warm mixture.

  4. Fold in fruit.

  5. Remove from heat, chill in refrigerator until syrupy, 45 minutes.

  6. Fold pecans, whipped cream topping and lemon juice (if using pineapple) into fruit mixture.

  7. Pour mixture into 8-inch square pan.

  8. Chill for 2 hours.

  9. Cut into squares and serve.
