Granny'S Fruit Cake

A home-kitchen version of granny's fruit cake, written step by step so it's easy to follow that's worth the oven time.

Ingredients
- 2 2/3 c. cake flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 c. butter or margarine
- 1 3/4 c. sugar
- 4 eggs or equivalent egg substitute
- 1 c. milk or skim milk
- 2 tsp. vanilla extract
- 1/3 c. oil
- 1/2 c. each: peanuts or mixed nuts, walnuts, pecans, almonds, raisins, mixed dried fruit or anything else you like
Method
Preheat oven to 350°.
Sift together flour, baking powder and salt.
Set aside.
Cream butter and sugar.
Add eggs to creamed mixture.
Combine milk, vanilla and oil in a measuring cup. Alternate flour mixture and milk mixture until batter is blended. Process the fruit/nut mixture until small pieces.
Fold into batter.
Bake in two 9-inch cake pans 35 to 40 minutes or Bundt pan 50 minutes.
