Peach Muffins

A home-kitchen version of peach muffins, written step by step so it's easy to follow that's worth the oven time.
Ingredients
- 1 (6 oz.) jar baby food peaches
- 1 tsp. soda
- 10 Tbsp. butter, softened
- 1 c. sugar
- 2 eggs
- 1 1/4 c. flour
- 1/4 tsp. salt
- 1/2 tsp. vanilla
Method
Preheat oven to 350°.
Grease muffin tins for 12 muffins. Stir baking soda into peaches; they will foam up.
Cream butter and sugar.
When smooth, add eggs, one at a time.
Alternately add flour and peaches, then salt and vanilla.
Fill each cup nearly to the top.
Bake 20 to 25 minutes.
