A italian take on pizza salad, written step by step so it's easy to follow built around good cheese and pantry staples.

Ingredients

  • 1/2 lb. ring macaroni
  • 8 oz. Monterey Jack cheese
  • 3 fresh tomatoes
  • 2 tsp. salt
  • 1 tsp. pepper
  • 2 c. croutons
  • 1/4 c. vinegar
  • 1/3 c. Parmesan cheese
  • 1 purple onion
  • 1 Tbsp. oregano
  • 1/2 c. oil

Method

  1. Dice tomatoes and onion; cube cheese.

  2. Mix tomatoes, onion and cheese with cooled, cooked macaroni.

  3. Add all other ingredients except Parmesan cheese and croutons.

  4. Refrigerate 2 or more hours. When ready to serve, add croutons and Parmesan cheese.
