Potatoes Au Gratin

A mediterranean take on potatoes au gratin, written step by step so it's easy to follow built around good pork and pantry staples.

Ingredients
- 6 to 8 baking potatoes, baked in oven with skins on
- 1 lb. Velveeta cheese, cut in chunks
- 1 c. mayonnaise
- 1 onion, chopped
- salt and pepper
- 6 strips bacon, chopped and sauteed until half cooked
- 1/4 c. pimento-stuffed olives, sliced
Method
Remove skins from cooked potatoes and cut into large dice. Toss with next 4 ingredients.
Pour into greased casserole and sprinkle with bacon and olives.
Bake at 325° for 1 hour.
