Quick Zucchini Cake

A home-kitchen version of quick zucchini cake, written step by step so it's easy to follow that's worth the oven time.
Ingredients
- 1 box yellow cake mix
- 4 eggs
- 1/2 c. vegetable oil
- 1 Tbsp. vanilla extract
- 1 tsp. cinnamon (optional)
- 2 c. grated unpeeled zucchini
- 1/2 c. raisins
- 1/2 c. chopped nuts
Method
In a mixing bowl, heat cake mix, eggs, oil, vanilla and cinnamon for 6 to 7 minutes.
Fold in zucchini, raisins and nuts. Spoon into a greased and floured 10-inch fluted tube pan.
Bake at 350° for 40 to 50 minutes or until done.
Sprinkle with confectioners sugar, if you like.
