Sweet Potato Pudding

A home-kitchen version of sweet potato pudding, written step by step so it's easy to follow that's worth the oven time.
Ingredients
- 2 c. mashed sweet potatoes
- 1/4 c. melted butter
- 1 c. sugar
- 2 eggs, slightly beaten
- 1/4 tsp. nutmeg
- 1/4 tsp. cinnamon
- 1/8 tsp. cloves
- 1/2 c. Carnation
- 1/2 c. water
- 1/2 c. coconut
Method
Use canned sweet potatoes, drained.
Mix all ingredients together except coconut. Bake at 375° for 35 minutes.
Remove from oven and sprinkle with coconut. Return to oven and brown.
