Winter Strawberry Muffins

A home-kitchen version of winter strawberry muffins, written step by step so it's easy to follow that's worth the oven time.
Ingredients
- 1 3/4 c. flour
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 3/4 c. sugar
- 1/2 c. chopped pecans
- 2 eggs
- 1/2 c. vegetable oil
- 10 oz. pkg. frozen strawberries
Method
Thaw strawberries.
Sift dry ingredients together in a large bowl.
Stir in pecans.
In a separate bowl, whisk together eggs, oil and strawberries.
Stir into dry ingredients.
Mix lightly. Spoon into greased muffin tin.
Bake in preheated oven for 20 to 25 minutes at 400°.
Yields 2 dozen.
